Curry chicken & potatoes over white Jazmine rice

Let me just say that I am NOTHING close to a chef lol…. There are some things that I just cannot cook no matter how hard I try. Can’t master everything, right? But, there are some dishes that I make very well & have had people tell me it was the best they ever had. One of the dishes that I make very well is curry chicken. There are so many different ways to make it but I found a way that is SUPER EASY & tastes just as good as the Jamaican spots I hit just for curry. So I decided to share the recipe. Here is what I use:

– Chicken parts (I love wings but u can cut up some breasts or thighs if u prefer)
-4 cloves of garlic
-1/2 onion
-4 tablespoons of Curry powder (whichever brand u prefer to use)
-1/2 red pepper
-1/2 green pepper
-fresh thyme
-4 white potatoes, peeled & cut up into pieces

First, I washed my chicken thoroughly; some people peel off the skin but I prefer not to. Once it’s clean, I sit my chicken to the side in a bowl; I should add that glass is better to use because the curry powder will stain a plastic bowl. If u like, add a little salt to the chicken; I add salt & seasoning salt (I put that on everything lol). Next, I chop up my onions, peppers, & garlic; I break up the thyme & I dump it all into the bowl with my chicken. I take 2 tablespoons of the curry powder & add it to my chicken as well. It is best to mix everything with your hands to ensure that u get all those ingredients mixed in well. Plastic gloves are ideal because the curry powder will certainly stain your finger nails. Once I mix all my ingredients into the chicken, I let it sit & marinate so the chicken can absorb the seasonings; I let it marinate over night but if you are cooking the same day let it sit in the fridge for at least 1 hour.
After it has been marinating over night, I’m ready to cook. I put my pan on the stove over med-high heat. I slice up a few more onions while Im waiting on the pan to heat up. Once my pan is hot, I add a little vegetable oil & the onions I have just sliced. I let them brown & then I add 2 more tablespoons of the curry powder. I stir the powder into the pot with the onions letting them both cook just for a few minutes before I add my chicken. Once I add my chicken, I let the chicken brown a little on both sides & finally I add about 2 cups of boiling water (just enough to cover the chicken) & I also add the potatoes. Once it’s all boiling, I reduce the heat, cover my pot, & let it all simmer until the potatoes are tender. This usually takes about 30 minutes. While that is simmering I sauté my cabbage & make a pan of jasmine rice. Tonight I made a pan of cornbread as well. Cornbread is my signature side; I make it with ALMOST everything!

Anyway, that is how I make my curry chicken & potatoes 😉

God Knows BEST

A few days ago I heard a radio message about trusting God and not getting discouraged when our prayers are not answered right away; and believing He knows what He’s doing when our prayers are not answered at all. This message really stuck to me because it made me think about the many times I’ve prayed for something and didn’t get what I was asking for. I can even remember thinking, Somebody told me that God will give me the desires of my heart so why is He not doing so? (Key phrase: somebody told me) When I actually read Psalms 37:4 for myself, it says, “Delight yourself in the Lord AND He will give u the desires of your heart”. Hmmm, I thought. DELIGHT myself in the Lord. Well what does it mean to delight myself in the Lord? To delight myself in Him is to find happiness in Him…. To find JOY in Him…. Gladness. So I must first get to know Him…. attach myself to Him and Trust Him. I can’t delight myself in what I cannot trust.

So what makes me trust Him? When I look back and think about all the things He saved me from, I realize He’s always had my best interest at heart. He has been looking out for me my entire life by NOT answering every single prayer.  Had he answered my prayer to let me get that job I wanted so badly, I would not have ended up in the position I’m in now which I LOVE! I would not have met my dear coworker/friend who has been instrumental in my spiritual growth. Her knowledge of the Word and thirst for God began impacting my life from our very first conversation. Think about something you prayed so hard about in your past that you can now look back on and say, “Thank You Lord for not giving me what I asked for!”  Had He answered your prayer for that woman or man to be the ONE, you would be miserable now that you think about it. If He had answered your prayer about getting you out of that storm that you felt was killing you slowly, you would not have built up the strength that you have today from GOING THROUGH IT! If you can look back on your life and say, ” If it had not been for [this] I would not be as STRONG as I am today; I would not have as much FAITH as I have in Him today; I would not be as CLOSE to Him as I am today”–   you, my friend, should be able to trust that God was looking out for you back then and He has not stop looking out for you now.

Trust in Him and know that He often has something much Greater in store for us than what we are asking for. I think about a friend of mine. She was a single mother with one child at the time, but took on two of her family members because their mother could not take care of them. She lived in a small apartment and had been trying to move to a bigger place. But every place she applied to denied her application. She did not understand why she kept getting denied because she had good rental history, good credit, and decent income. I remember her being so discouraged. I didn’t understand it either. Why won’t anybody except her application, I thought. Turns out, it was all apart of God’s plan. After being denied by numerous apartments, and just as she was giving up, she was approved to move into a 3 bedroom house! She could rent to OWN this 3 bedroom, 2 bathroom, finished basement, big backyard HOUSE. And the payments were much lower than what she would have been paying if she had rented an apartment. I was so happy for her. I remember saying to her, “Wow, so this is why you were denied everywhere you applied. Thank God for not answering your prayer!” Imagine if He had answered her prayer right away and  given her an apartment. She would not be living in her own home right now with more than enough space for her now family of 6. God had a much bigger plan for her than a 2 bedroom apartment.

We may be praying about something that we want so badly but God seems like He’s not hearing us. Or, we may be holding onto something that is not for us, not realizing that God has something, bigger, better, and greater than what we can ever imagine.

 I believe that once we are truly delighted in Him our desires will begin to change anyway, and become His Will. One sure way to know that your prayers will ALWAYS be answered each and every time? Pray for God’s Will in your life. That is one prayer that will ALWAYS be answered.

Have you ever been trying to get to know a woman & she seemed kind of interested but wouldn’t give you a chance?  You wonder why she barely responds to your texts? And when she does, it’s usually dry….. Why every time you ask to see her, she is “busy”? Besides the fact that she could already have a man & that she could truly be very busy, it could also be something else: it could be your approach.

If you constantly ask her, “When are we going to chill?” Or “When can I see you?” that tells her a few things that are not good. It can tell her that you are 1) not serious about her & probably just wanna get in her pants 2) she is not worth a real date 3) you do not know how to treat a lady because you are used to little girls who are okay with “just chilling” as a first date. If you are not serious about her or anyone at the moment, this is not for you. But, if you are serious about wanting to get to know her & are serious about finding your GOOD THING AND OBTAINING  FAVOR FROM THE LORD, keep reading. I am giving the first couple of steps to get to know her. KEEPING her is a whole other subject we can discuss later but you have to GET her first. I am not an expert; I am just writing from a woman’s perspective & I have to tell you, this is something that A LOT of guys do. If that is not you, cool. If it is, please stop right now, okay? Kay.

First, when talking to her you must express interest in something that’s important to her. Maybe ask questions about her career or what she enjoys doing…. Or maybe even about something she’s told you she has been working on. Us women love talking & we love for a man to LISTEN; and we like to feel like you actually care about what we are telling you. Ask about her children if she has them… & her family. Showing interest is very important because we often times come across guys who barely like to talk, let alone listen. Famous line from guys, “I don’t like talking on the phone.” Well WE do! For hours sometimes lol. I’m just saying, show us something different.

Ask her OUT. Do NOT ask if you can chill. Do NOT ask if she can come see you or if you can go see her. Ask her out to dinner….. Or some place where you could have fun & get to know one another (bowling, for example or going to a live show). I am not saying you have to spend a lot of money & you have to “wine & dine” her & go all out. That’s not what I’m saying at all. I am only saying that when you are truly trying to get to know a WOMAN (hint: not a girl) you have to show some effort. Like I said talk to her, get to know her, date her. And give her some time to warm up to you…. If you get her number today don’t ask her if you can see her tonight. For me, I like to talk on the phone a little bit with a man just to see if I even want to go out on a date with him. Every woman is different; I am only speaking for myself & for some other women I know who agree with me.


What if you are ALREADY doing these things & she is still not responding, not trying to going out on a date with you, & still not showing you any interest? Unfortunately, she is not into you & probably doesn’t know how to tell you; so she ignores you hoping you will eventually get the hint and give up. I know that’s not the right way to go about it. She should be honest about how she feels, which is the mature thing to do. But some find it easier to “disappear” than to formally break things off.
