Curry chicken & potatoes over white Jazmine rice

Let me just say that I am NOTHING close to a chef lol…. There are some things that I just cannot cook no matter how hard I try. Can’t master everything, right? But, there are some dishes that I make very well & have had people tell me it was the best they ever had. One of the dishes that I make very well is curry chicken. There are so many different ways to make it but I found a way that is SUPER EASY & tastes just as good as the Jamaican spots I hit just for curry. So I decided to share the recipe. Here is what I use:

– Chicken parts (I love wings but u can cut up some breasts or thighs if u prefer)
-4 cloves of garlic
-1/2 onion
-4 tablespoons of Curry powder (whichever brand u prefer to use)
-1/2 red pepper
-1/2 green pepper
-fresh thyme
-4 white potatoes, peeled & cut up into pieces

First, I washed my chicken thoroughly; some people peel off the skin but I prefer not to. Once it’s clean, I sit my chicken to the side in a bowl; I should add that glass is better to use because the curry powder will stain a plastic bowl. If u like, add a little salt to the chicken; I add salt & seasoning salt (I put that on everything lol). Next, I chop up my onions, peppers, & garlic; I break up the thyme & I dump it all into the bowl with my chicken. I take 2 tablespoons of the curry powder & add it to my chicken as well. It is best to mix everything with your hands to ensure that u get all those ingredients mixed in well. Plastic gloves are ideal because the curry powder will certainly stain your finger nails. Once I mix all my ingredients into the chicken, I let it sit & marinate so the chicken can absorb the seasonings; I let it marinate over night but if you are cooking the same day let it sit in the fridge for at least 1 hour.
After it has been marinating over night, I’m ready to cook. I put my pan on the stove over med-high heat. I slice up a few more onions while Im waiting on the pan to heat up. Once my pan is hot, I add a little vegetable oil & the onions I have just sliced. I let them brown & then I add 2 more tablespoons of the curry powder. I stir the powder into the pot with the onions letting them both cook just for a few minutes before I add my chicken. Once I add my chicken, I let the chicken brown a little on both sides & finally I add about 2 cups of boiling water (just enough to cover the chicken) & I also add the potatoes. Once it’s all boiling, I reduce the heat, cover my pot, & let it all simmer until the potatoes are tender. This usually takes about 30 minutes. While that is simmering I sauté my cabbage & make a pan of jasmine rice. Tonight I made a pan of cornbread as well. Cornbread is my signature side; I make it with ALMOST everything!
